As September sets in and we start back to school, I always look for inspirational ideas to jazz up the mid week lunch box for both myself and my daughter. After a lovely long summer of salads, it's now time to start adding a little warmth and extra goodness to our meals to keep us as fighting fit as possible throughout the autumn and winter months.
This little recipe is very simple to make and is great for using up leftover quinoa or baked sweet potatoes. It's packed with protein, fibre, complex carbohydrates and a variety of vitamins and minerals; a great addition to a lunch box or evening meal. They are also a great way to mix up our proteins, as often, we rely too heavily on meats, fish and dairy.
This recipe will make between 8-12 burger patties depending on the size you make them.
Ingredients:
1 can black beans, drained and rinsed well
1 large sweet potato, baked and skin removed
1 cup cooked quinoa
2-3 cloves garlic, finely chopped
1/2 tsp mild chilli powder
1 tsp oregano or mixed herbs
1 1/2 tsp cumin
Large pinch of salt and pepper
Method:
1. Mash the beans and sweet potato together in a bowl (you want roughly 75% mashed whilst others remain whole adding texture)
2. Add in the cooked quinoa, chopped garlic and spices. Mix together well.
3. Portion into required pattie sizes and shape using your hands.
4. Bake at 180c for 15-20 minutes before turning and baking for a further 15 minutes.
5. These are lovely eaten hot or cold and can be frozen to help make next weeks mid week lunch that little bit easier and tastier!
